Roasted Purple Veggie Sammies

This sandwich is filled with deliciousness throughout each veggie layer. To create the vibrant purple colour, we’re using all the purple veggies we could find - onions and cabbage for the win! Serves 2

1 1/2 cups sliced red onions
4 to 5 cups sliced cabbage
6 tbs olive oil
2 cloves garlic, minced
salt and pepper to taste
Arugula
Vegan Mayo
Dijon Mustard
4 slices of your favourite bread, toasted

  1. You can start off by preheating the oven to 425F and line a pan with parchment paper or rub with olive oil.
  2. Add all the ingredientes into the pan, and mix well.
  3. Let veggies bake for about 40 minutes, or until they are well roasted with slightly burnt tips. I like to start checking the oven after about 30 minutes.
  4. Build your sandwiches with your favourite slices of bread, vegan mayo, mustard, arugula and the grilled veggies.
  5. Serve warm and enjoy!
