- You can start off by preheating the oven to 425F and line a pan with parchment paper or rub with olive oil.
- Add all the ingredientes into the pan, and mix well.
- Let veggies bake for about 40 minutes, or until they are well roasted with slightly burnt tips. I like to start checking the oven after about 30 minutes.
- Build your sandwiches with your favourite slices of bread, vegan mayo, mustard, arugula and the grilled veggies.
- Serve warm and enjoy!
