Overnight Blueberry Work-Friendly Oats

Prepare this recipe the night before for a delicious breakfast you can take enjoy with no prep required the morning of. From fridge to table, in literally seconds. This recipe is naturally sweetened with banana, maple syrup and fresh wild blueberries. Makes 2 servings.

1 banana, mashed
1/2 cup whole oats 
1/4 tsp cinnamon
1/8 tsp powdered ginger
2 tsp pure vanilla extract
1 tbs almond butter
1 cup almond milk
2 tbs maple syrup
2 tbs chia seeds
1/2 cup fresh wild blueberries

Toasted Coconut Slices
Fresh Wild Blueberries
Mint Leaves

  1. In a large bowl, add all ingredients in the mentioned order stirring well after each addition.
  2. Divide into two containers and place in the fridge overnight.
  3. In the morning, top with fresh coconut slices, blueberries and mint leaves.
  4. Enjoy!
