Mediterranean Pasta Salad

You don't need to travel to Greece to enjoy a flavourful Mediterranean pasta salad. Prepare the night before and this salad makes the perfect lunch for work, especially when you pack it in a reusable container from terra20. Pasta shown in Onyx stainless steel 2-layer container. Serves 4 to 6.

Ingredients:
Water, for cooking the pasta
2 1/2 cups of your favourite whole grain pasta
1 tbs olive oil
3/4 cups chopped tomatoes
3/4 cup chopped cucumbers
1/3 cup chopped red onions
1/2 cup black olives
Basil leaves, to taste

1/2 cup olive oil
1/2 cup white vinegar
2 cloves garlic, minced
1 tsp dried oregano leaves
Salt & pepper, to taste

1. Start by preparing the noodles. Bring water to a boil in a medium pan, add in the pasta and the tbs of olive oil. Let cook for about 15 minutes or according to the packaging instructions.

2. Rise out the pasta under cool water to stop the cooking process, and drain. Let cool in the fridge for at least 15 minutes. While you wait, chop the other ingredientes and prepare the dressing.

3. To prepare the dressing, in a medium bowl add the olive oil, white vinegar, the garlic, oregano leaves, and salt and pepper. Whisk each ingredient together after each addition.
 
4. Remove the pasta from the fridge, add in the tomatoes, the onions, the cucumbers, and black olives. Drizzle the mediterranean dressing and serve cold with fresh basil leaves.
