Looking for the secret to keeping little bellies full and moods stabilized? Meet one of our favourite healthy fats, the coconut! Sources of quality fats, like coconuts, are essential for optimal health, especially when it comes to your child’s growth and development. So why so much love for coconut? Well, it’s made up of medium chain triglycerides, which means the fats from coconut provide the body with a quick source of energy and outstanding fuel for our brains. These little gems are loaded with coconut oil and shredded coconut for a satisfying mid-day snack. They are also free from most common allergens like nuts and are both paleo and vegan, making them perfect for eaters of all kinds. We even managed to sneak a little turmeric (an anti-inflammatory superfood) in there too… shh we promise not to tell.
- 1 ½ cup + ¼ cup (for coating) shredded coconut
- 2 teaspoon melted coconut oil
- ⅛ cup maple syrup
- 2 tablespoons coconut milk
- 1 teaspoon vanilla extract
- ⅛ teaspoon ground turmeric
- ½ teaspoon cinnamon
- Pinch of sea salt
Place the shredded coconut in food processor with coconut oil and blend until a dough forms. Then add the remaining ingredients. Shape mixture into 1 inch balls and coat with remaining coconut. Refrigerate for up to one week!
